LISTERIA MONOCYTOGENES IN READY-TO-EAT FOOD
Listeria monocytogenes is the causative agent of listeriosis, an infection that is sometimes fatal. Listeria monocytogenes is common and can be found, in varying numbers, in almost all raw materials: vegetables, fruit, fish, meat and milk. Because Listeria readily establishes itself in the food production environment, this pathogen is often found on surfaces that are difficult to clean. Contamination of products is possible via those contaminated surfaces (e.g. slicing machines).
